Delicious Fish Sauce Recipes and Dressings to Enhance Any Fish Dish
Owing to its relatively delicate flavour, fish responds well to being served with dressings and sauces, and these quick and easy dressings and fish sauce recipes are some of the best.
FISH SAUCE RECIPE #1
SALSA VERDE
There are many variations of 'green sauce', so this recipe is just a basis for your own version. Tweak the quantities and ingredients until you've created the one that suits your palate best.
Ingredients
- A bunch of fresh parsley
- A handful of basil leaves
- 4 tinned anchovy fillets
- 2 tablespoons of capers, rinsed, or thoroughly soaked if salted
- 2 chopped garlic cloves
- 1oz (30g)of roughly chopped green olives (stones removed)
- 1 tablespoon of white wine vinegar
- 1 slice of good quality white bread (crust removed) torn into pieces
- 7fl.oz (200ml) of extra-virgin olive oil
- Salt and pepper
Making the Sauce
- Remove the stalks from the parsley, and put them in a blender along with everything except the olive oil and the salt and pepper
- Operate the blender in short bursts until the contents are finely chopped
- Then, with the blender blades spinning, trickle just enough olive oil to create a thickish sauce
- Add salt and pepper seasoning to taste.
Voila! Salsa verde. Or have I got my languages mixed up?
FISH SAUCE RECIPE #2
WARM TOMATO VINAIGRETTE DRESSING
Best served warm but not hot, this dressing is delicious with fried or grilled fish.
Ingredients
- 3 tomatoes, peeled, de-seeded and chopped
- 1 teaspoon of chopped fresh tarragon, basil or chives
- 1 shallot or half a small onion, finely chopped
- 3fl.oz (85ml) of olive oil
- 1 tablespoon of fresh lemon juice
- Salt and pepper
Making the Sauce
Now simply mix the ingredients together and heat gently in a small pan, then pour the warm dressing over the hot fish.
